KEN DOLAN, CNNfn ANCHOR, DOLANS UNSCRIPTED: I was drinking.
DARIA DOLAN: .to do the wine segment for you.

DARIA DOLAN: .all I had to do was step out of my office, take an elevator and a couple of escalators to the basement of the building here where we sit.

KEN DOLAN: All right.
DARIA DOLAN: .in the Time Warner Center. [Company: Time Warner Inc.; Ticker: TWX; URL: http://www.timewarner.com/] And I was joined by Sue Torres. She is chef and owner of Suenos Restaurant, but in Spanish that means dream.
KEN DOLAN: I knew that.
DARIA DOLAN: OK. And we`re going to take a look at what we did at Whole Foods.

DARIA DOLAN: Let`s start with the citrus fruit because, for example, here on this lime we have a white spot that is not the beautiful green that`s here.
SUE TORRES, CHEF & OWNER, SUENOS RESTAURANT: Right.
DARIA DOLAN: Does that matter?
TORRES: OK. In this case, if the lime feels like a good weight for its size and it has some brown spots or some yellow spots, it is OK. It`s the juice that you`re generally getting. And if it has juice, you`ll know just by applying a little bit of pressure if it feels like it`s soft.
I would purchase this lime before I would purchase something that`s beautifully green that is hard as a rock, because this is not going to yield any juice.
DARIA DOLAN: Yes.
TORRES: And another thing you could do to - before you`re cutting any citrus is to take the palm of your hand and roll it on a hard surface. Roll the citrus on a hard surface and slice it down the middle. By rolling it, you`re bringing out more of the juices. You`ll yield more juice.
DARIA DOLAN: Here we have mangos. There are a lot more exotic type fruits than what the average American has been used to...
