Lentils are such lovable little things. For starters, one cup of cooked lentils has 18 grams of protein and more fiber (15.6 grams) than seven slices of whole wheat bread. And lentils lord it over their dried bean relatives when it comes to last-minute meals: Because they need no pre-soaking and cook in under 45 minutes, they're an ideal choice for down-to-the-wire dinners.
Brown and green (French) lentils retain their disc shapes and chewy texture during cooking, making them perfect for stews and salads. Red and yellow lentils get softer and are best in soups, purees and dips. No matter what color you choose, with all these uses, what's not to love?
