5 easy things to do with a tortilla
Each serves 1
1. Breakfast Burrito: Mix 1/2 cup of black beans with 1/2 cup of corn, and warm 1 minute in microwave on high power. Place mixture in middle of tortilla. Sprinkle with 1 tsp. chopped cilantro and 1 oz. any low-fat cheese. Fold into a burrito.
2. Easy Huevos Rancheros: Beat 1 cup of egg whites, and scramble them in a frying pan over tow heat or cook in the microwave for about 2 minutes in a microwave-safe bowl. When completely cooked, place on tortilla. Top with 2 Tbs. of salsa or taco sauce and 1 oz. of low-fat shredded cheese. Serve.
3. Quick Treat: Spread 2 Tbs. of hummus over a tortilla in a thin layer. Place either spinach or arugula leaves over the hummus. Then roll the tortilla from one end to another tightly and eat.
4. Quesadilla with a Twist: Coat a frying pan with cooking spray, and warm it over medium heat. Place a tortilla flat in the pan. Sprinkle 1/3 cup of shredded Monterey Jack cheese and 1/3 cup of shredded zucchini evenly over the tortilla, Cook until the ...
