Insider's Guide total makeover

April Joy Varner, 32, financial executive

DIET RX: "April is unaware of how much she consumes," Sasson says. "She drinks fruit juices, which are a concentrated source of calories, and snacks on high-fat dairy products like cheese. To satisfy her cravings for salt, she'll eat handfuls of deep-fried vegetable chips, which are basically potato chips. She thinks she's eating healthy because she buys organic food and takes flaxseed supplements -- but when you're overweight, you have to focus on less saturated fat and fewer calories." VARNER SAYS: "The food journal definitely helped me become aware of my portions. I couldn't believe how much I nibbled and how much cheese I ate. One night I came home from work late, starving -- so I had three slices of Colby, and three slices of Muenster. Then I made a tuna melt for dinner! Now I've eliminated cheese altogether. I've also cut out Terra chips -- they're just a waste of calories -- and reach for a bag of reduced-fat microwave popcorn instead. If I want a sweet drink, instead of juice, I have green tea with Splenda. I'm getting to the point where I'm able to make smarter decisions."

Four dice-size squares of cheese equal a proper snack serving.
