Mar. 29--SAN ANTONIO--Facing analysts for the first time, new Luby's chief executive Chris Pappas hinted Wednesday at possible menu changes and revealed a bottom-up strategy to revive the flagging cafeteria chain.
"Everything starts and stops at the store level. If it doesn't work at the store level, it won't work at the corporate level," Mr. Pappas said.
He and his brother, Harris, have been successful operators of Houston-based Pappas Restaurants Inc., owner of the popular Pappadeaux and Pappasito's eateries.
Chris Pappas, 53, was named Luby's president and CEO on March 9. Harris Pappas, 56, who became chief operating officer, wasn't present for Wednesday morning's conference call with analysts.
