Oct. 8--NEENAH, Wis.--You'll catch more bees with honey, but vinegar just might capture your heart.
It happened to Bob and Colleen Lace, proprietors of Colleen's Tough Times, a spiced maker of gourmet flavored vinegars and mustards.
Bob Lace, who describes himself as "just the guy who does all the work," says the 10-year-old-enterprise poses no threat to mass producers like Heinz or French's.
Yet with steadily building demand for Tough Times' products -- five varieties of mustard and 13 strains of flavored vinegar -- times are not as tough as product labels might suggest. Bob says he needs a new and larger commercial kitchen to accommodate the firm's growing production needs. The company moved from smaller kitchens twice before for the same reason.
