Of all the exotic vegetables, one stands head and shoulders above the rest for its antioxidant content and anticancer benefits: the Chinese toon leaf.
The United Nations' Asian Vegetable Research and Development Center (AVRDC) analyzed the nutritional composition of 150 vegetables, focusing on the amounts of vitamins A, C and E, as well as on the dosage of antioxidants and phenolics.
The AVRDC released its results October 21. Rosemary ranked second on the list. Others in the top 10 included edible amaranth, moringa and lycium leaves. Generally, the vegetables with a deeper green color showed a higher antioxidant quality.
