Spinach is chock-full of a carotenoid that could help the body fight prostate cancer, according to new findings reported in the September 2004 issue of The Journal of Nutrition by scientists working in Japan.
Researchers at the National Food Research Institute in Japan found that the carotenoid neoxanthin--when rearranged by the body's gastric juices--"inhibited the proliferation of prostate cancer cells." And the greater the intake, the greater the protective effect.
