Q: My doctor says I must limit my sodium intake, so I'm cutting out canned spaghetti sauce. I grew tomatoes this summer. Is there an easy way to freeze them to use in homemade sauce later? _ J.B., Barberton, Ohio.
A: The easiest way is simply to plop the whole tomatoes in plastic freezer bags and freeze them. When you're ready to use the tomatoes, thaw them and slip off the skins. The tomatoes will be mushy, but for sauce, who cares?
Frozen whole tomatoes keep forever in the freezer, although the flavor pales over time. Use them within three to four months for the best flavor.
