ORINDA, Calif. _ Prepping for a catering gig, the white-jacketed chefs bustle about, whisking eggs, piping chocolate and icing confections. It's a rush, squeezing it all in between calculus and history classes.

This is not your mother's home ec class. Miramonte High School's foods program is culinary arts and business prep for future caterers and chefs.

Along with the assignments for beurre blanc and risotto, Marsha Sias' students draft business plans. That homework assignment spun off seven actual small businesses last semester, including two baking enterprises and an early morning coffee stand for caffeine-deprived faculty members.
