It's fair to say that Mark Messina eats, lives and breathes his work -- with an emphasis on eats. A longtime vegetarian, the 49-year-old nutrition Ph.D. has counted soy a dietary staple for almost 30 years. He's also spent the past decade studying, writing about and lecturing on the health benefits of soy, as well as organizing and chairing four international symposiums on soy and health. Where soy is concerned, Messina wrote the book, literally. In 1994, he and his wife, Virginia Messina, M.P.H., R.D., co-wrote The Simple Soybean and Your Health (Avery), the first book ever written on the myriad health benefits of soy.
