An Interview With Julian Niccolini and Alex von Bidder

Niccolini and von Bidder are the owners of New York City's Four Seasons restaurant, which celebrates its 50th anniversary this year.

When people ate at formal restaurants in the past, they had no choice but to order strictly from the menu. Today, the staff at a good restaurant will do anything in its power to please; you just have to know how to ask.

Phone it in. If you have a special request, the best thing you can do is explain what you want when you're making the reservation. We have lots of clients who order ahead by phone. Often they ask for special low-fat meals for a business lunch so that they don't have to make a fuss in front of their colleagues. You can even ask that the waiter pass it off as a special once you're there.

Trim the fat. If you see something on the menu that sounds appealing, but you'd like it prepared ...
