At this time of year, when summer standbys such as strawberries and watermelons can be hard to find, exotic fruits are ripe for the picking. Here are some you're increasingly likely to see in stores.
1. Buddha's hand (fingered citron). Native to the Mediterranean area. There's little flesh, with a strong citrus fragrance. Use it raw to flavor rice, candied in baked goods, and in jams, jellies, and confections. It can even be used as a room freshener.

2. Cherimoya. Native to South America. Peel its skin, remove the seeds, and you have sweet, juicy pulp with a custardlike consistency. The flavor has hints of mango, pineapple, papaya, and vanilla custard. Spoon the fruit out or use it in salads, sorbets, pastry, and jams.
