Feb. 10--REAL PEOPLE @ WORK: MELISSA AND RICH SMITH: A passing comment on Melissa Smith's Caribbean cooking sparked an idea that led to her successful restaurant business.

Her husband, Rich Smith, was working at the Air War College, when he says, "I asked my wife if she could prepare some Caribbean cuisine for a Christmas party."

After the party a general said, "This is good burned chicken. You guys need to open a restaurant." He was referring to Melissa's Jamaican jerk chicken.

Smith says he went home and did some research and found there was a market for a Caribbean restaurant in Montgomery. The Smiths opened Island …
