If ever there was a buzzword in health and nutrition it's trans fat. Seemingly more feared than bird flu, trans fat finally appears to be finding its way out of our country's food supply. Recently, as you may have heard, the New York City Board of Health voted unanimously to outlaw anything less than a scant amount of trans fat in the city's panoply of restaurants. And a large health care chain, MedAssets, is teaming up with the natural product distributor United Natural Foods Incorporated (UNFI) to deliver organic and trans-fat-free meals to some 2000 US hospitals.
February, which is American Heart Month, is the ideal time to take a closer look at trans fat. As author Vera Tweed mentions in her provocative article, "Have a Healthier Heart," p. 44, "These unhealthy fats, even in small amounts, play havoc with our arteries."
