I met a woman recently who told me she had completely reversed her type 2 diabetes through diet changes alone. She had been taking two or three medications to manage her condition, and now, to both her and her doctor's amazement, she didn't need any of them. The eating plan that worked so well for her consisted, not surprisingly, of lean protein, lots of fresh vegetables, small amounts of fruit and occasional servings of whole grains--but little to no sugar or refined flours. The dramatic change in her health didn't take long: After a month or two on the new regimen, her blood sugar and cholesterol dropped, along with extra pounds. Now in her 70s, she feels better than she has in years--and credits the power of food with helping her body heal.
