Fifteen years ago, U.S. consumers didn't care beans about soy. Now they're swallowing soy pills, soy milk, soy energy bars, soy smoothies, soy pasta, and even a vodka distilled from soy.
By 2005, Americans are expected to spend $4.7 billion on soy foods, an 844 percent increase over 1990, according to Soyatech, a publishing and consulting firm that tracks the soybean and oilseed industry. Sales of soy-supplement pills rose more than 500 percent between 1997 and 2002, the latest year for accurate estimates, according to data from the Nutrition Business Journal, which follows the supplement industry.
