THIS is a lovely recipe from the book for a family meal in these cold, bitter days.

Author Joanna recommends giving the onions plenty of time to fry gently in the butter so their flavour will be sweet and mellow. And she suggests substituting more stock for the beer should anyone not want to use alcohol.

Serves 4 INGREDIENTS:

* 25g (1oz) butter

* 1 tblsp vegetable oil

* several sprigs of thyme

* 8 sage leaves, shredded (supermarkets have these)

* 500g (1lb) onions, chopped

* 1tsp caster sugar

* 2 garlic cloves, crushed

* 1 tblsp plain flour
