The pop of champagne corks will be heard in bars across the city more than ever this evening. Once the celebratory tipple of the upper class, champagne or sparkling wine is growing enormously in popularity today. "Pubs are increasingly selling champagne by the bottle and glass, and introducing champagne-based cocktails like the Mimosa," says Krishna Shantakumar, general manager of a lounge bar, who has seen a dramatic growth in demand lately.
