Jul. 31--STORRS -- Beads of sweat broke out on Molly Smith's forehead and ran down her nose as she hacked away at packed earth on the edge of the UConn campus. As she turned over the soil to prepare a bed for muskmelons, a white butterfly flitted over neat rows of scallions, snap peas, nasturtiums and heirloom tomato plants. A few feet away, two other students hunched over a patch of herbs, weeding and talking quietly. A slight breeze brushed the hot field and a scent of manure rose from the ground. Smith and about a dozen other students preside over this patchwork garden on a dirt road off Route 195.
