Alice Benedetto is looking a bit tired. As president and founder of Raw Indulgence Ltd. in Valhalla, she spends some long days in the "kitchen" overseeing the making and packaging of her raw food bars.
But before you say yuck!, the organic live-food bars are not made of Brussels sprouts and turnips smooshed into a candy-bar shape. Her Raw Revolution bars come in eight flavors from spirulina and cashew to coconut and agave nectar; and yes, for the less adventurous, raisin and chocolate.
In 2003, she started off making 200 bars that consisted of just two flavors. Today, she won't disclose her production numbers, but she said that her products are in some 500 stores nationwide and available via rawindulgence.com, Internet stores and Amazon.com, where a 12-pack sells for $13.50.
Sales have been concentrated primarily on the West Coast.
"West Coast people are more open to this concept; more into health foods," Benedetto said. To prove the point, she said she recently gut Dodger Stadium in downtown Los Angeles as a customer.
