The folks at Empire Fresh-Cuts know convenience foods are all the rage these days. Anything that doesn't need to be peeled, sliced, diced or cooked from scratch literally flies off the shelves of grocery and specialty stores, to be taken home and consumed quickly by time-strapped families and individuals.

Already in the onion-growing business, Empire Fresh-Cuts took operations to a new level in March 2004, when it opened a 27,000-square-foot onion-processing plant in Oswego, N.Y.
