To the surprise of no chocoholic, part of the cacao tree's botanical name, Theobroma, means "food of the gods." For anyone sweet on confectionery, here's a guide to chocolate terms:
Cacao (or cocoa) beans, They come from cacao tree pods and are the basis for chocolate.
Cocoa nibs. What remains after cocoa beans have been cleaned, roasted, cracked, and winnowed.
Cocoa butter. The natural fat in the beans.
Chocolate liquor. What results when cocoa nibs are heated and ground. Also termed bitter, unsweetened, baking, or cooking chocolate.
Cocoa powder. Chocolate liquor processed to remove some fat. Must be between 10 and 22 percent cocoa butter.
