The health message is back. With no small fanfare, McDonald's, Burger King, and Wendy's have reintroduced entree salads; KFC is once again offering a nonfried chicken meal; and Taco Bell is letting customers substitute salsa for cheese and sauce in any menu item. Some chains are even promoting what amounts to a burger salad for consumers counting carbohydrates.
