Women who dislike the bitter taste of foods such as Brussels sprouts tend to be thinner than women whose taste buds donit register these flavors as strongly. In tests by Beverly Tepper at Rutgers University in New Brunswick, New Jersey, so-called supertastersI had an average body mass index of 23.5 (healthy), those categorized as medium tasters had one of ?26.6 (overweight), and nontastersi was nearly 30 (obese). This variation between supertasters and nontasters represents the difference between a five foot six woman weighing 145 pounds versus 184 pounds. Although nontasters may benefit from eating ?a wider array of vegetables, they sense less fat in food and thus tend to eat more of it, studies show. This genetic preference canit be changed, Tepper says, but nontasters can help control their weight by intensifying flavors with hot sauce, mustard, or vinegar.
