Melanie Dallas has created a profitable niche, marketing foods hot enough to make strong men cry.

"You walk in here and it is all hot and spicy," she said of her Hot Stuff of Saratoga fiery food store at 10 Phila St. in Saratoga Springs. "People come in here for hot."

With her enthusiasm, business savvy and energy Dallas has prospered in the sub-sector of the gourmet food industry, continuing to grow her business while the economy slows and retail businesses around her struggle.

"I am basically a one-woman show. I do it all: marketing, managing the shop, ordering, displaying merchandise, research and testing new products and advertising."

She knows how to spot a trend. She talks about her five-year plan. She keeps meticulous records to gauge business growth and she makes her downtown Saratoga Springs location and the Internet work for her. She has positioned herself so that she does not compete with the supermarkets.

Dallas has seized on significant demographic trends that have reshaped America's tastes. As the Hispanic population has grown, mainstream America has gotten more adventurous. Ketchup has been losing market share to salsa. Cable television chefs have been encouraging…
