You could say a Clearwater company is going whole hog over chicken.

That's 14 flavors of chicken sausage, six flavors of chicken burgers and eight types of chicken sauces to pour on pasta.

Casual Gourmet Foods Inc. started two years ago by focusing on chicken sausage, which chief executive officer Ben Rizzo describes as "chicken that looks like sausage."

What Rizzo means is that the sausage is a combination of chicken and other ingredients. It comes in sausage casings and can be used to make dishes such as pizza, omelets, kabobs and salads.

The privately held company sold $400,000 worth of chicken sausage in 1999. This year, it expects sales …
