As Boca Raton restaurateur Stephan Geson well knows, change is a constant in the restaurant business.
That's why, when sales started to flatten out a year ago at his popular Tavern in the Greenery restaurant in Boca Raton because of increased competition from Delray Beach's emerging Atlantic Avenue entertainment district, Geson changed his marketing strategy to snag more corporate parties and weddings.
"You do have to change as you go along," said Geson, 59, who spent a short while as a Boca Raton real state broker before buying the 380-seat restaurant in 1992.
