As Boca Raton restaurateur Stephan Geson well knows, change is a constant in the restaurant business.
That's why, when sales started to flatten out a year ago at his popular Tavern in the Greenery restaurant in Boca Raton because of increased competition from Delray Beach's emerging Atlantic Avenue entertainment district, Geson changed his marketing strategy to snag more corporate parties and weddings.
