Fred Riess is launching Snappy Tomato Pizza's biggest expansion ever in an effort to reach 100 sites.

Snappy Tomato Pizza Co. plans to paste its mascot Elliot - a fiery red tomato that spores a chefs hat and a steaming pizza - atop at least 50 more stores by 2000.

The Florence-based pizza company is aggressively looking for franchisees from Illinois to Florida to go forward with the largest expansion in its 21-year history.

"We are going to explode," said Fred Riess, president and chief executive officer at Snappy Tomato, which operates five company-owned stores and 49 franchised pizza eateries in the United States, Canada and England. It operates …
