All of the electric cooktops performed well overall. Like gas cooktops, electric models can't match the quick heating and instant response of induction models. But as the price column shows, induction cooktops typically cost $1,500 or more. The top-rated Electrolux, the Kenmore, and the Diva induction models have four induction elements instead of one (Gaggenau) or two induction and two radiant elements (Thermador and Viking).Having both types allows you to cook with both magnetic and nonmagnetic pans. For most induction models, you can't use all the induction elements on high power at once, and all induction cooktops make a slight humming sound when in use. As the scores show, paying more doesn't guarantee a better cooktop.
Guide to the Ratings
Overall score is based on cooktop performance at high and low heat, as well as safety issues such as surface temperature. High heat reflects how quickly the highest-powered burner heated water to near-boiling. Low heat reflects how well the lowest-powered burner melted and held chocolate without scorching and how the most powerful burner, set to low, held tomato sauce below a boil. Size is the width of the cooktop in inches. It does not indicate the size of the cutout, which depends on the model. Continuous grates abut one another, making it easier to slide pots around or to support large pans over two burners. Price is approximate retail.
