Hotel pools are not just for swimming anymore. While swim-up bars have been popular for years, the Hilton Los Cabos Beach & Golf Resort in Mexico takes in-pool refreshment a step further with its Sun Fun Hut Sushi Bar. From the comfort of submerged stools alongside the infinity pool, swimmers dine on sushi with a Mexican twist: the Banana Roll includes crab, smoked salmon and plantain (hiltonloscabos.com ).
At the Delano in Miami Beach, swimmers don't need to leave the Philippe Starck-designed pool to sit down and take a break. Guests can lounge at the submerged bistro table and chairs in the shallow end of the Water Salon, as the hotel calls it.
