Like many who identify themselves as proud southerners, Dave Shiflett ("A Wider View," Sept. 21) is guilty of claiming southern provenance for that which originated elsewhere. Shiflett's most egregious misappropriation is his inclusion of scrapple in his pantheon of southern delicacies. Nothing could be farther from the truth.

Scrapple, a mixture of pork scraps, cornmeal, flour, and spices, came out of the Pennsylvania Dutch countryside (perhaps via Germany), and was first commercially produced by slaughterhouses in Philadelphia. Even ...
