Oct. 31--Though chicken giant KFC Corp. on Monday joined a growing list of restaurant chains eliminating unhealthy trans fat oils from their foods, many companies, including the biggest, McDonald's Corp., have yet to do the same--with few consequences. KFC said it plans to eliminate trans fats by April 2007 by using a new soybean oil to cook its Original Recipe and Extra Crispy fried chicken, potato wedges and other menu items, but hasn't found a good alternative yet for its biscuits. KFC said many of its approximately 5,500 restaurants already have switched. With Monday's announcement, KFC joins Wendy's, Ruby Tuesday, California Pizza Kitchen and others, which have already cut the use of trans fatty acid, a preservative shown to clog arteries and increase the risk of heart disease.
