Piedras, mitos y comidas, antiguos sonidos de la cocina chilena: la calapurca y el curanto *.

RESUMEN

Las piedras han sido desde antiguo elementos que han jugado un papel importante en la cocina, sin embargo no todas las culturas las han adoptado dentro de su sistema culinario. Conjeturamos que ello está vinculado al "imaginario de la incorporación", es decir a la operación simbólica que hacen todas las sociedades al entender que "somos lo que comemos". En Chile hay dos preparaciones en donde las piedras poseen un alto contenido valórico: la calapurca y el curanto, en las cuales las piedras son centrales como fondos de cocción. Esta apropiación positiva estaría relacionada con el universo mítico presente en el mundo aymara (calapurca) y Chiloé (curanto) que conecta antepasados, fertilidad y piedras.

ABSTRACT

Since ancient times, stones are elements that have played an important role in the kitchen. Nevertheless, not all cultures have adopted them within their culinary system. We speculate that this in linked to "the imaginary of incorporation", that is to say, to the symbolic operation that all societies perform on understanding that "we are what we eat". In Chile there are two preparations in which stones possess a great valoric content: the "calapurca" and the "curanto" in which stones are central means of cooking. This positive appropriation could be related to the universal myth present in the aymara world ("calapurca") and Chiloé ("curanto") that connect ancestors, fertility and stones.
