BROWN SUGAR-ZUCCHINI BREAD
1 (9-by-5-inch) loaf pan or 4 (5 {-by-3 {-inch) mini loaf pans
Nonstick cooking spray
2 cups unbleached all-purpose flour
{ cup packed light- or dark-brown sugar
6 tablespoons granulated sugar
1 { teaspoons ground cinnamon
} teaspoon ground ginger
\ teaspoon ground mace or nutmeg
1 teaspoon baking soda
{ teaspoon baking powder1 teaspoon salt
1 cup old-fashioned oats
} cup vegetable oil or { cup vegetable oil plus \ cup walnut oil
3 large eggs
2 teaspoons pure vanilla extract
2 cups grated zucchini (about 2 medium zucchini)
{ cup golden raisins
1 tablespoon turbinado sugar or other crystallized brown sugar
1. Preheat oven to 350 degrees. Lightly spray the loaf pans with cooking spray and set aside.
2. In a large mixing bowl, stir together the flour, brown sugar, granulated sugar, cinnamon, ginger, mace or nutmeg, baking soda, baking powder and salt. When combined, mix in oats. Make a well in the center of the dry ingredients. Measure the oil in a measuring cup and add the eggs …
