Sep. 29--You can usually get a healthy meal in school cafeterias. And in many, you can lunch on junk.
That's one thing I learned while visiting cafeterias in five school systems in the Carolinas recently. Also, don't count on a sophisticated array of produce. Corn and potatoes, sure. Squash and greens? Probably not.
The foods offered in public schools vary by state, school district and even individual schools. Many states weigh in with laws governing, say, soda sales. School districts often have their own rules, too. Generally, a school district's food service staff decides what cafeterias serve each day.
