The U.S. has seen a robust uptick in beef consumption in the last three years, and that makes Philip Hickey a happy, happy man.

He's chairman and chief executive of Rare Hospitality International Inc., whichowns, operates and franchises 173 beef-centric restaurants, including Texas roadhouse-themed LongHorn Steakhouses, Canadian Rockies-themed Bugaboo Creek and upscale Capital Grille. Most are located in the Southeast

and Midwest.

The growing carnivorousness of the American eating public is evident in Rare's financial returns. It recently announced that earnings for the fourth quarter ended Dec. 31 should come in at 32 or 33 cents a share, which would top the 29 cents analysts originally projected, according to First Call/Thomson Financial.It also beat Wall Street forecasts in the first three quarters of 2000.
