Cajun Joe's is coming

Hawaii's first Cajun Joe's, an affiliate of the $1 billion Subway Sandwiches & Salads chain, is set to open in the Wahiawa Town Center in April.

The 25-year-old Subway chain purchased the rights to Cajun Joe's about 1 1/2 years ago to provide additional opportunities to the owners of its Subway franchises.

Many franchisees felt expansion of the sandwich shops were diminishing, said company president and founder Fred Deluca from his Milford, Conn., office last week.

Cajun Joe's, which originated in Boston, now has more than 83 stores nationwide. It specializes in chicken dishes and other Southern-style foods such as …
